Apeel Sciences was founded in 2012 by materials scientist James Rogers. The company developed Edipeel, a thin, plant-based coating used on produce like avocados, limes, apples and cucumbers. The idea is simple: slow down moisture loss and oxidation so fruits and vegetables stay fresh-looking longer.
What surprises people is how it reached the market.
Apeel submitted a GRAS notice for the monoacylglycerides used in the coating, arguing that they were “Generally Recognized As Safe” and therefore didn’t require the same kind of premarket approval people often assume the FDA gives to new food ingredients. The FDA’s response said it had “no questions at this time.” That wording matters. It isn’t the same thing as the agency independently approving the product.
And under the current GRAS system, companies can sometimes determine for themselves that an ingredient qualifies as GRAS without going through a traditional approval process.
Bill Gates gets dragged into almost every conversation about Apeel, so here’s the part that often gets lost: he does not own the company. The Gates Foundation provided roughly $1.1 million in early grants in 2012 and 2015, aimed partly at reducing food waste in places where refrigeration is limited. Apeel later attracted money from investors including Breakthrough Energy Ventures, Andreessen Horowitz, the Rockefeller Foundation and others, eventually reaching a valuation of about $2 billion.
But the bigger consumer question isn’t really who invested.
It’s this: How are you supposed to know when something has been added to the outside of your food?
There’s no normal ingredient panel sitting next to loose produce. In many cases, the only obvious identifier is a small “Apeel Protected” sticker — assuming you notice it.
Another product, Organipeel, became part of the controversy too. An EPA filing listed it as 0.66% citric acid and 99.34% other ingredients. OMRI later clarified that it had not approved Organipeel as an edible coating for raw organic produce, but only for use as a post-harvest fungicide. Apeel voluntarily discontinued Organipeel in 2023.
Retailers also started responding to the public pushback. Kroger said its own private-label produce was not treated with Apeel, while noting it could not make the same guarantee for every third-party brand it carried. Costco, Albertsons and Kroger were also reported to have moved away from Apeel-treated avocados after consumer criticism intensified.
That reaction tells you something important: people want transparency.
If a coating is intentionally designed to remain on produce during shipping and storage, shoppers shouldn’t have to investigate the supply chain to find out it’s there. A plain-English label would settle a lot of the argument.
That idea has even reached Congress. In July 2025, Rep. Marlin Stutzman introduced H.R. 4737, the Apeel Reveal Act, which would require fruits and vegetables coated with Edipeel or Organipeel to disclose that treatment by name.
Whatever you think of the coating itself, the basic question is pretty reasonable:
