Southern Cast Iron Skillet Cornbread (with Beef Tallow) 🌽
Ingredients:
•4 tablespoons beef tallow
•1 cup plain cornmeal
•1 cup milk
•1 egg, lightly beaten
•1 teaspoon sugar (optional — leave it out if you prefer your cornbread savory)
Directions:
1.Place an 8-inch cast iron skillet in the oven with 4 tablespoons of beef tallow.
2.Set the oven to 400°F and let the tallow melt while it heats — the skillet should be good and hot.
3.In a mixing bowl, stir together the cornmeal, milk, egg, sugar (if using), and 3 tablespoons of the melted tallow. Mix just until blended — don’t overwork it.
4.Carefully remove the hot skillet from the oven and swirl the remaining 1 tablespoon of tallow around to coat the bottom and sides.
5.Pour the batter into the sizzling skillet — you should hear it crackle a little.
6.Return the skillet to the oven and bake for about 22 minutes, or until the top is golden and the edges are crisp.
7.Let it rest a few minutes before cutting. Serve warm with butter, honey, or a drizzle of molasses for that old-time flavor.
