Roasted Tomato Caprese Salad
Ingredients:
For the Roasted Tomatoes:
2 pounds ripe Roma tomatoes, halved lengthwise
4 cloves garlic, minced
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
For the Caprese Salad:
1 pound fresh mozzarella cheese, sliced into 1/4-inch thick rounds
1 cup fresh basil leaves
1/4 cup balsamic glaze (optional, for drizzling)
Extra virgin olive oil (for drizzling)

Roasting the Tomatoes
Okay, let’s get started with the most flavorful part – roasting those beautiful tomatoes! Roasting really intensifies their sweetness and brings out a depth of flavor that you just can’t get any other way. Trust me, this step is worth it!
Preheat the Oven: First things first, preheat your oven to 400°F (200°C). Make sure your oven rack is in the middle position for even cooking.
Prepare the Tomatoes: Wash the Roma tomatoes thoroughly. Then, halve them lengthwise. I find Roma tomatoes work best because they have a good balance of flesh and seeds, and they hold their shape well during roasting.
Mince the Garlic: Mince the garlic cloves as finely as you can. You want that garlic flavor to infuse every nook and cranny of the tomatoes. If you don’t have a garlic press, just chop it very finely with a knife.
Combine Ingredients: In a large bowl, combine the halved tomatoes, minced garlic, olive oil, balsamic vinegar, dried oregano, dried basil, and red pepper flakes (if using). Season generously with salt and freshly ground black pepper. Don’t be shy with the seasoning! The tomatoes need it to really shine.
Toss to Coat: Gently toss all the ingredients together until the tomatoes are evenly coated with the oil and spices. Make sure every tomato half gets a good dose of flavor.
Arrange on Baking Sheet: Spread the tomatoes in a single layer on a baking sheet lined with parchment paper. This prevents sticking and makes cleanup a breeze. Make sure the cut sides of the tomatoes are facing up.
Roast the Tomatoes: Place the baking sheet in the preheated oven and roast for 45-60 minutes, or until the tomatoes are softened and slightly caramelized. The roasting time will depend on the size and ripeness of your tomatoes, so keep an eye on them. You want them to be tender and slightly wrinkled, with some browning around the edges.
Cool Slightly: Once the tomatoes are roasted to perfection, remove them from the oven and let them cool slightly before assembling the Caprese salad. This allows the flavors to meld together even more.
