Crispy Cheese Chilli Oil Eggs
Ingredients
Eggs
Cheddar cheese, shredded
Olive oil or vegetable oil (for frying)
For the Chilli Oil:
Olive oil
Red chili flakes
Garlic, minced
Soy sauce (optional)
Salt and pepper, to taste
For garnish: Fresh herbs (like cilantro or parsley)
Instructions
Start by making the chili oil. Heat olive oil in a small pan over low-medium heat. Add the red chili flakes and minced garlic. Let the oil infuse for 2-3 minutes, stirring occasionally. Be careful not to burn the garlic. Optionally, add a splash of soy sauce for depth of flavor. Set aside to cool.
Heat a non-stick skillet over medium heat and add enough oil to cover the bottom of the pan.
Crack the eggs into the pan and cook for 3-4 minutes, or until the edges of the eggs turn crispy. For a runnier yolk, cook the eggs for less time; for firmer yolks, cook longer.
Once the eggs are crispy, sprinkle shredded cheddar cheese over the eggs while still in the pan, allowing it to melt slightly.
Carefully remove the eggs from the pan and place them on a plate.
Drizzle the prepared chili oil over the crispy eggs, ensuring the garlic and chili flakes are evenly distributed.
