Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce
Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper to taste
8 oz mushrooms, sliced
3 cups fresh spinach
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Directions:
Season the chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms and cook for 5 minutes, or until they release their juices and start to brown.
Add the minced garlic and cook for about 1 minute, or until fragrant.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour in the heavy cream and stir in the grated Parmesan cheese and Italian seasoning. Cook for 3-5 minutes, or until the sauce thickens slightly.
Return the chicken breasts to the skillet, nestling them into the sauce. Cook for an additional 5 minutes to allow the flavors to meld.
Garnish with fresh parsley and red pepper flakes, if desired. Serve hot.
