Rustic Slow-Cooked Lamb Shanks in a Rich Herbed Gravy
Recipe
Ingredients:
4 lamb shanks
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
2 onions, chopped
4 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
3 cups beef broth
1 can (14 oz) diced tomatoes
1 tablespoon rosemary, chopped
1 tablespoon thyme, chopped
2 bay leaves
Directions:
Season the lamb shanks with salt and pepper. Heat olive oil in a large skillet over medium-high heat and brown the lamb shanks on all sides. Transfer to the slow cooker.
In the same skillet, add onions, garlic, carrots, and celery and sauté until softened, about 5–7 minutes.
Add 1 cup of beef broth, scraping up any browned bits from the pan. Simmer for 2–3 minutes.
Pour the vegetable mixture over the lamb shanks in the slow cooker. Add the remaining beef broth, diced tomatoes, rosemary, thyme, and bay leaves.
Cover and cook on low for 8 hours, or until the meat is tender and falls off the bone.
Remove bay leaves before serving. Serve the lamb shanks with the rich herbed grav
