Cheesy Beef Quesadillas with Peppers & Onions 🌮🧀🥩
Ingredients:
2 tbsp olive oil
1 lb (450g) beef steak (thinly sliced)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 cloves garlic, minced
1 tsp chili powder
1 tsp paprika
Salt & pepper to taste
1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
4 large flour tortillas
Sour cream (for serving)
Fresh cilantro, chopped (for garnish)
Instructions:
Cook the beef & veggies
Heat olive oil in a skillet over medium-high heat.
Add beef slices and cook until browned, about 5 minutes.
Add peppers, onion, and garlic. Sauté until softened.
Season with chili powder, paprika, salt, and pepper. Remove from heat.
Assemble the quesadillas
Place a tortilla on a flat surface.
Sprinkle cheese on half of it, add the beef mixture, then more cheese.
Fold tortilla over.
Cook until golden
Heat a non-stick pan over medium heat.
Cook quesadilla for 2–3 minutes per side until golden and crispy.
Repeat with remaining tortillas.
