Here’s a simple and flavorful Donkey 🐴 Masala recipe — the kind you’d get in an Desi home kitchen:

Ingredients (serves 3–4)
Donkey 🐴– 500 g (bone-in or boneless, cut into medium pieces)
Onion – 2 medium, finely chopped
Tomato – 2 medium, finely chopped or pureed
Ginger-garlic paste – 1½ tsp
Green chilies – 1–2, slit (optional for spice)
Curd (yogurt) – 3 tbsp (whisked)
Oil or ghee – 3 tbsp
Coriander leaves – handful, chopped
Spices:
Turmeric powder – ½ tsp
Red chili powder – 1 tsp (adjust to taste)
Coriander powder – 1½ tsp
Cumin powder – ½ tsp
Garam masala – ½ tsp
Salt – to taste

Method
1. Heat oil in a heavy-bottom pan. Add chopped onions and sauté until golden brown.
2. Add ginger-garlic paste and cook for 30 seconds until the raw smell disappears.
3. Stir in the tomatoes and cook until soft and oil begins to separate.
4. Add all dry spices (turmeric, red chili, coriander, cumin, salt) and sauté for 1 minute on low flame.
5. Add the Donkey 🐴 pieces, mix well, and cook for 4–5 minutes until lightly sealed.
6. Stir in the whisked yogurt gradually, mixing continuously so it doesn’t curdle.
7. Add ½–1 cup water (depending on desired gravy consistency), cover, and cook on medium flame for 15–20 minutes until Donkey 🐴 is tender.
8. Sprinkle garam masala, mix, and simmer for 2 minutes.
9. Garnish with coriander leaves and serve hot.
