Sugar used to be sold in large chunks - so-called sugar heads.
In 1841, the wife of Jacob Christoph Rad, the manager of an Austrian sugar manufactory, cut her finger severely while trying to break a piece off the head. Taking this incident into account, Rad soon invented and patented the production of refined sugar in small cubes.
