Another interesting creation was “Hoover Hog,” named derisively after President Herbert Hoover, who was blamed for the Depression.
This was not a hog in any traditional sense but rather various parts of a raccoon, possum, or even a squirrel, which were easier to catch than conventional livestock. The meat would be cooked and seasoned in a manner similar to traditional pork dishes.
In a time when traditional meats were scarce and expensive, Hoover Hog became a protein substitute for some families, particularly in rural areas.
