Ingredients
• 6-7 bananas
• 3 c flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 1 c butter, room temp, divided
• 1 c sugar
• 1/2 c, plus 2 tbsp packed brown sugar, divided
• 3 large eggs, room temperature
• 2 tsp vanilla extract
• 1 1/2 c buttermilk, room temperature
• 1 c Walnuts, chopped, divided
• 4 oz white chocolate, shaved
Whipped Cream Frosting
• 1 quart heavy whipping cream, chilled
• ¼ c sugar
• 2 tsp vanilla extract
Method
Heat oven to 350°F. Grease & flour two 8" or 9" cake pans.
Heat a sauté pan over medium-high heat. Add 1/4 c butter, 2 tbsp brown sugar & 2 sliced bananas to the pan. Cook until bananas are sweet & caramelized, about 5-7 minutes. Mash caramelized bananas with a fork & set aside.
Whisk flour, baking powder, baking soda, & salt together. Set aside.
Using mixer beat butter on high speed until smooth & creamy, about 1 minute. Add white sugar & remaining 1/2 c brown sugar & beat on high for 2 minutes until creamed together.
Add eggs & vanilla. Beat until combined. Beat in caramelized bananas.
With mixer on low speed, add buttermilk & dry ingredients alternating in three additions. First the flour mixture, then buttermilk, then flour mixture etc. Do not over mix.
stir in 3/4 c walnuts.
Pour batter into prepared pans. Bake 40-45 minutes. The cakes are done when a toothpick inserted in the center comes out clean.
Remove cakes from oven & Allow to cool completely.
Carefully slice tops off both cakes, to even them out for stacking & frosting. You can make a two layer cake, or slice each layer in half to make a 4 layer cake.
While cakes are cooling, make the frosting. In a large bowl using a mixer beat chilled heavy cream, vanilla & 1/4 c sugar together on high speed until stiff peaks form.
spread each cake layer with whip cream frosting & banana slices. Cover outside of cake with frosting & decorate with remaining walnuts & white chocolate.
