Short version:
If someone was spraying chemicals from a plane, you would see the trail to start at the plane - right at a nozzle, tank, or the engine.
Contrails don't work like that. They have a gap, and that gap is proof they're not smoke or spray.
Long version:
1. Contrails aren't coming out of the engine. They are forming behind it.
Jet exhaust is hot, invisible water vapor. It only becomes a visible cloud after it has left the engine, mixed with extremely cold air - usually below -40°C - and has had time to cool, condense, and freeze into ice crystals. That takes distance. So you get 20-100 meters of clear air behind the plane, then the white streak starts.
If it was a chemical spray, there would be no reason for a gap. A spray system would be visible immediately at the source.
2. The exhaust itself is invisible.
What you see is not soot or chemicals. It's pure ice, just like a natural cirrus cloud. That's why contrails can last for hours and spread out if the air up there is very humid. Dry air = short contrail that disappears fast. Humid air = long, persistent contrail that spreads. No chemical additive needed.
When people say "the chemicals are in the contrails," it still doesn't explain the physics. If you put a chemical into hot jet exhaust, you would still see it immediately as a liquid spray. You wouldn't get a clean gap and then pure white ice appearing out of nowhere.
The classic chemtrail photo actually shows the opposite of what the theory claims: a gap at the engines, then ice forming later = exactly what real contrails do.
