To keep bananas from ripening too soon , wrap a little tape around the stem, to cover the end, it slows the ripening process

I wrap green-yellow & green bananas with plastic saran wrap at the top & a elastic band to hold in place, which keeps them from riping too quickly....this gives them about 3 more days ~ I read about it & works great...
