THE SECRET TO THE CRISPY CHURROS
Ingredients
1 cup (250 ml) of water
2 tablespoons of sugar
2 tablespoons butter or margarine
1 pinch of salt
1 cup (130 g) of all-purpose wheat flour
1 egg (optional, for softer texture)
1 teaspoon vanilla essence (optional)
Vegetable oil for frying
To sprinkle:
1/2 cup of sugar
1 teaspoon cinnamon powder
👨 🍳 Step by step preparation
1. Prepare the dough
In a medium pot place the water, sugar, butter and salt.
Boils to medium heat, stirring occasionally.
When it starts boiling, remove from the heat and add all the flour at once.
Mix vigorously with a wooden spoon until it forms a compact dough that comes off the walls of the pot.
2. Insert egg (optional)
Let it cool for a few minutes.
Add egg and vanilla if you want a softer dough.
Mix until fully integrated. The dough will be thick and smooth.
3. Form the churros
Place the batter in a pastry sleeve with wide star mouth.
Form the churros on a floured tray or directly on the hot oil, very carefully.
4. Freír
Heat abundant oil at 170–180°C.
Fry the churros in tongs until golden brown on the outside, about 3-4 minutes.
Slip them on absorbent paper.
5. Rebozar
Mix sugar and cinnamon in a bowl.
Reject the churros still hot in this mix.
Extra
Accompany them with:
thick hot chocolate
sweet milk
arequipe
condensed milk
