Dandelion & Honey Gummy Bears
Ingredients:
1 cup Dandelion Tea — made by steeping ½ cup dandelion petals (yellow parts only) in 1 heaping cup of boiling water for 15 minutes
¼ to ½ cup Honey — use ¼ cup for lightly sweet gummies
3 tablespoons Vital Proteins Grass-Fed Gelatin — for that chewy gummy texture
Silicone Gummy Bear Molds — or any fun silicone molds you like
Instructions
Start by preparing your dandelion tea. Steep ½ cup of dandelion petals in a heaping cup of boiling water for 15 minutes. Strain the petals and keep the tea.
Whisk the honey into the warm tea until fully dissolved.
Slowly sprinkle the gelatin into the tea, one tablespoon at a time. Whisk well after each addition.
After all the gelatin is added, continue whisking for 1–2 minutes until fully dissolved. If needed, gently heat the mixture over the lowest stove setting, stirring constantly, to ensure complete dissolution.
Carefully pour the mixture into silicone gummy bear molds or any shape you like.
Let the gummies set at room temperature for at least 20 minutes. Test one to check firmness—if needed, allow a few more minutes to finish setting.
Once fully set, pop the gummies out of the molds.
Store in an airtight container in the refrigerator.
Tips & Alternatives
For a floral flavor boost, add a few lavender buds or chamomile petals when steeping the tea—just strain them out before adding the honey.
If you want a firmer gummy, add an extra tablespoon of gelatin.
Use a dropper to fill molds with precision and avoid mess.
Keep refrigerated for best texture and freshness, but be warned—they disappear fast!
