Ever have one of those "Eureka!" moments?A "Eureka!" moment is one of those times when you accidentally stumble across a fact that has eluded you while you are looking for something else.Recently I was looking for a childhood favorite recipe for Buckwheat pancake and waffle mix when I stumbled across the information below. As it turns out, buckwheat is no relative of its' namesake, wheat. As a matter of fact, buckwheat is better for your diet than anything made of wheat, and for those who are gluten intolerant, it has no gluten in it to begin with as wheat does.Buckwheat (Fagopyrum esculentum) or common buckwheat is a flowering plant in the knotweed family Polygonaceae cultivated for its grain-like seeds and as a cover crop. Buckwheat originated around the 6th millennium BCE in the region of what is now Yunnan Province in southwestern China. The name "buckwheat" is used for several other species, such as Fagopyrum tataricum, a domesticated food plant raised in Asia.Despite its name, buckwheat is not closely related to wheat. Buckwheat is not a cereal, nor is it even a member of the grass family. It is related to sorrel, knotweed, and rhubarb. Buckwheat is considered a pseudocereal, because its seeds' high starch content allows them to be used in cooking like a cereal.As it turns out, I had been looking for an alternative to regular pizza crusts due to the high carb count of processed flour and this alternative foots the bill overwhelmingly without a loss of flavor. The carbohydrate count per serving of buckwheat pizza crust is slightly less than 1/3 as much per serving as normal pizza crust!Unfortunately, I haven't been able to find a pizza brand that uses buckwheat for their pizza crusts yet, but this could create an entire new market for it considering those such as myself who are looking for healthier diet options. I may have to begin making my own pizzas & crusts as an alternative to unhealthy pizzas currently on the market; unless I can find one who will embrace this discovery, pick up the ball and run with it!
