Decided to smoke up some chicken thighs. Separated the skin from the meat and seasoned meat with SPG, Onion, paprika. Add skin back on and hit with Salt and Pepper. Smoked at 225 for 2 hours with apple wood. Then cranked it up to 300 - 325 and hit it with some KC for about another 45 minutes. DAMN! Was some good eats!
