There may not be a more apt pairing than cowboys and bacon, America’s favorite meat. But how did this relationship begin? Cowpokes and ranch hands didn’t just wake up and smell the bacon one morning. It turns out, bacon in the United States came long before the cattle drives of the late-19th century. Here’s what we know... The word “bacon” has been around for a long time, and its meaning has evolved over the centuries. English speakers borrowed the word from Old French in the 1300s, around the same time they also adopted the word “pork.” Back then, “bacon” was just another way to describe meat from the back half of a pig. This included the belly, loin, thigh, and rump.
