If I get my wife pregnant and she gives birth while we’re vacationing in the UK does my son get UK citizenship?! Didn’t think so. No illegal alien should give birth and that child be a citizen when they’re here illegally

A woman I know from US gave birth while in Canada. She was told when the child was 18 she could choose to be a Canadian citizen if she wished.

Well, if you're vacationing in the U.K. you are likely there on a visa. Whether that gives your offspring U.K. citizenship is up to U.K. law. Not quite the same as an illegal.
