✨Homemade Ketchup✨
If using fresh tomatoes, bring a large stock pot of water to a boil. While the water is heating, wash your tomatoes. Boil the tomatoes for three minutes (the skins will start to split). Carefully remove and place the tomatoes in ice water. Remove the skins, cores, and seeds if desired. (you can use a food mill to remove the seeds)
Crush the tomatoes using a blender or food processor and place them in a large stock pot. Bring to a boil and let simmer for 25 minutes, stirring occasionally.
Next, add the tomato paste and white vinegar. Bring back to a boil and add the sugar and spices. Mix well. Reduce heat and simmer for another 5 minutes or until it is to your desired consistency.
To Store: You can water bath can this ketchup to last years or store it in the freezer for 6 months - 1 year. Otherwise, keep your ketchup in the refrigerator until you are ready to enjoy.
