For years I've been wanting to wax cheese to make it shelf stable. Added benefit, your cheese will continue to age. I finally found cheese wax in large chunks which was at a manageable price. Today I stored 30 lbs of medium Cheddar, 5 lbs of pepper Jack and about 5lbs of havarti with dill.
