1/1/2021 - It's kumquat time here in SE Texas! I usually just slice, deseed, and dehydrate at 135 degrees for about 12 hours. Seven pounds of kumquat filled up my dehydrator perfectly.This process makes them even sweeter and brings out the citrus even more. They turn out semi-soft with a little crisp. Delicious! But, this year I've got plenty more on the tree to experiment with a couple other ways I've been reading about.They will store for the rest of the winter in a mason jar with the air sucked out using the attachment to a FoodSaver. Just be sure to suck the air out every time you grab a little "snackie-snack".
