1/1/2021 - It's kumquat time of year! I usually just slice, deseed, and dehydrate at 135 degrees for about 12 hours. Seven pounds of kumquat filled up my dehydrator perfectly.This process makes them even sweeter and brings out the citrus. They turn out semi-soft with a little crisp. Delicious! But, this year I've got plenty more on the tree to experiment with a couple other ways I've been reading about.
