1/1/2021 - It's kumquat time of year! I usually just slice, deseed, and dehydrate at 135 degrees for about 12 hours. Seven pounds of kumquat filled up my dehydrator perfectly.This makes them even sweeter and semi-soft with a little crisp. Delicious! But, this year I've got plenty more on the tree to experiment with a couple other ways I've been reading about.
