Instant Pot Salmon with Easy Vegetable Rice18 ounces Rice, rinsed1 1/2 cup Dehydrated Vegetables Soup Mix (no seasoning in the mix)1/2 cup Butter, divided3 teaspoons Salt, divided5 1/4 cups Chicken Broth 2 pound Salmon Fillet, skin removed and cut into pieces1/2 cup Lemon Juice1/2 teaspoon Black Pepper6 cloves Garlic, minced/divided1/2 teaspoon Dill Weed To your inner liner of your Instant Pot add rinsed rice, veggies, 4 Tablespoons butter, 3 cloves minced garlic, 2 teaspoons of salt and chicken broth.Melt remaining 6 Tablespoons butter and combine with lemon juice, 1 teaspoon salt, pepper, minced garlic and dill weed.Place salmon into a pan that fits inside your Instant Pot liner and pour over lemon butter mixture. Cover with foil. Put a trivet into the liner on top of the rice mixture and place the covered pan of salmon on the trivet. Lock on lid and set pressure valve to sealing. Cook at high pressure for 3 minutes. When the cooking time is up, wait 10 minutes and then manually release the rest of the pressure. If the pin drops before the 10 minutes is up do not open the lid until the time is up. Remove pan of salmon and fluff the rice with a fork. Serve
