Easy Quiche
Take 2 frozen pie shells them sit for 15-20 minutes. Then, gently prick the pie shells with a fork on the bottom and sides to allow for even baking.
Pre-bake the 2 deep dish pie shells at 350° for about 15 minutes (you only want to partially bake the shells).
Once the pie shells have cooled to room temperature they are ready to fill with a batter.
For each separate pie shell:
- 2 eggs (whisked)
- 2/3 cups of milk or half-and-half cream
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 red bell pepper (diced)
- 1 green bell pepper diced
- 1 small to medium onion or 2 bunches of green onions diced
- 1/2 tablespoon of garlic powder
- 1 teaspoon - 1/2 tablespoon of herbs and spices of your choice
- 1/2 cup of shredded cheese
- 1/3 cup of bacon bits
Preheat oven to 375°. While preheating the oven, whisk eggs, milk, spices & herbs together.
Then, blend peppers and onions, then add half of the vegetable blend into the batter.
Then add cheese and bacon to the batter and gently mix. Finally, add the batter to the first pie shell. You can add extra shredded cheese to the top of the first quiche.
Repeat the adding and blending of ingredients to the second batter, then add the batter to the second pie shell and top with shredded cheese.
Place in oven on the middle rack and bake for 25-30 minutes or until the top is golden brown. Also, use a skewer or fork to poke the middle of the quiche, and make sure it comes out clean.
If need be, put foil over the tops so that the quiche to prevent burning if the quiche requires more cooking time.
Note: you can leave out the bacon bits for a vegetarian version of this quiche.
