Breakfast today was super early and rather sturdy, as well as being something new. Long day ahead! I discovered something new at La Salumina in Hurleyville NY. Coppa Di Testa it's called. When I googled it, I was repelled by what I found (head cheese...blehhh) but thought, "eh, what the heck," and I decided to give it a try as it didn't appear so disgusting in the package. Glad I did!I chopped it up and stuck it in the air fryer until it completely crisped. Just like bacon though far more savory due to the spices used when curing it.
