Focaccia with Caramelized Onion, Tomato & Rosemary

Ingredients:
1 package dry yeast
240 ml warm water
1 tsp honey
320 gr flour
2 tsp salt
120 ml plus 1 Tbsp olive oil
1 onion sliced
1 tomato sliced
2 sprigs fresh rosemary
30 gr grated Parmesan cheese
Instructions:
Stir together yeast, warm water, and honey. Let rest about 10 minutes.
Stir in flour, 60 ml olive oil and 1 teaspoon salt. Knead the dough until smooth, 5 to 10 minutes.
Cover the dough and let rest until doubled in size, about 1 hour.
Preheat oven to 220 degrees C.
Press the dough into a lightly oiled baking sheet. Using your finger, poke holes all over the dough. Drizzle the dough with 2 Tbsp olive oil. Let rest until the dough becomes puffy, about 20 minutes.
Heat 1 Tbsp olive oil in a skillet set over medium heat. Add onion slices and cook until onion is golden brown.
Top the dough with tomato slices, caramelized onions, rosemary, Parmesan cheese, and salt.
Bake until golden brown, about 20 minutes.
