Romanian Easter Bread with Chocolate and Nuts

Ingredients:
For the dough
120 ml warm milk
400 gr flour
1 packet instant yeast
3 large egg yolks, at room temperature
50 gr sugar
110 gr butter, softened
1/2 tsp. salt
1 tsp. vanilla extract
1/4 tsp. almond extract
For the filling
2 large egg whites
1/4 tsp. salt
100 gr sugar
2 Tbs. cocoa powder
100 gr toasted walnuts, finely chopped
50 gr chocolate, finely chopped
For shaping and baking
1 large egg
1 Tbs. butter, melted
2 Tbs. sanding sugar
Preparation:
Combine 1 cup of the flour with the yeast and 1/2 cup very warm water. Cover with plastic wrap and set aside for 30 minutes
Beat in the egg yolks, sugar, butter, and salt
Add the milk and continue to beat until combined, about 2 minutes. Gradually add the remaining flour. Knead until the dough is smooth, about 5 minutes. Add the vanilla and almond extracts, and continue to mix 1 minute
Transfer the dough to the greazed bowl and cover with plastic. Let rise 1 hour
