Posted in another group by Jordan Ashdown.Greek rabbit- rabbit cut up into pieces-1 large onion chopped-6 cloves garlic minced-12 allspice berries-4 bay leaves-2 cinnamon sticks-dried herbs (I use what I have on hand)-2 qts canned tomatoes-tomato paste-red wine-salt & pepper-olive oilSeason the rabbit, using salt and pepper and dry herbs of your choice. I have a lot of oregano out my back door, so I used that. Fry until golden brown in a heavy cast iron skillet using the olive oil. Remove the rabbit and set aside, add your onions, garlic and a sprinkle of salt. Saute until fragrant, and the onions are translucent. Deglaze the pan with some wine, and then add the rest of the ingredients. Cook until thick, should take about 1 hr. Serve over a bed of rice.
