Bacon corn dipTime: 25 minutesYield: 8 servingsIngredients• 8 ounces bacon chopped, uncooked• 4 ounces pickled jalapeños, chopped• 2 cloves garlic, minced• 4 cups corn, about 5 ears, cut from the cob• 1 cup mayonnaise• 4 green onions, chopped• 2 cups mozzarella cheese, shredded• 1/2 teaspoon salt, or to taste• 1/2 teaspoon pepper, or to taste• tortilla chips, for servingDirectionsStep 1In an oven-safe skillet, add chopped bacon and cook until brown and crispy.Step 2Stir in the jalapeños and garlic. Cook for 30 seconds or until you can smell the garlic.Step 3Stir in the corn. Cook and stir until the corn looks golden and chars.Step 4Then add mayo, green onions, and 1 1/2 cups of mozzarella cheese. Stir well and add salt and pepper to taste.Step 5Sprinkle more cheese on top then place in the broiler. Allow cooking for 3-5 minutes, or until golden brown.Step 6Serve with tortilla chips
