Bacon corn dip
Time: 25 minutes
Yield: 8 servings
Ingredients
• 8 ounces bacon chopped, uncooked
• 4 ounces pickled jalapeños, chopped
• 2 cloves garlic, minced
• 4 cups corn, about 5 ears, cut from the cob
• 1 cup mayonnaise
• 4 green onions, chopped
• 2 cups mozzarella cheese, shredded
• 1/2 teaspoon salt, or to taste
• 1/2 teaspoon pepper, or to taste
• tortilla chips, for serving
Directions
Step 1
In an oven-safe skillet, add chopped bacon and cook until brown and crispy.
Step 2
Stir in the jalapeños and garlic. Cook for 30 seconds or until you can smell the garlic.
Step 3
Stir in the corn. Cook and stir until the corn looks golden and chars.
Step 4
Then add mayo, green onions, and 1 1/2 cups of mozzarella cheese. Stir well and add salt and pepper to taste.
Step 5
Sprinkle more cheese on top then place in the broiler. Allow cooking for 3-5 minutes, or until golden brown.
Step 6
Serve with tortilla chips
