Yummy dinner tonight! Don't make a squishy face until you hear me out!!Tonight we feasted on Cajun Fried Alligator Bits on a bed of yummy spicy Cajun Tomato & Jalapeño Pepper sauce!Last time and first time I had alligator was in a bar in Miami Florida and I liked it then and especially liked it my way! For the record, alligator tastes a bit like quail with a very delicate and slight flavor of seafood. It's really very good.Tonight's alligator was dipped in a sour cream and milk bath and then dusted with a super hot and spicy Cajun seasoning I had prepared with various ingredients, followed by a high heat deep fry in real oil. There was no way to fry these in the air fryer as I don't think they would have come out just right. A rare event with my air fryer. The sauce consisted of diced tomatoes, onions, jalapeño peppers and a bit of crushed fresh garlic clove. I cooked this up gently in a PAM sprayed pan until the onions were golden and glistening. Yummy combination!!
