Caroline’s Bourbon Bacon Sweet Relish
Yield: Approximately 12 pints
Ingredients:
6 lbs bacon, chopped
15 - 16 large onions, diced
2 cups apple cider vinegar
½ cup brown mustard
¼ cup of garlic, minced
1 cup bourbon
1 cup maple syrup
½ cup brown sugar
¼ cup balsamic vinegar
2 Tblsp Worcestershire sauce
Directions:
1. Fry chopped bacon until brown and just crisp, drain to remove fat, reserving the fat. Transfer the cooked bacon to a large crock pot.
2. Add diced onions into pan with enough bacon dripping left to sauté. When lightly caramelized, transfer to the crock pot.
3. Chop the garlic in a food processor with the vinegar and mustard and add to the crock pot.
4. Add the bourbon, maple syrup, brown sugar and Worcestershire sauce to the crock pot and heat on high to boiling.  Reduce heat to low, crack the lid and reduce the relish until it’s a nice light brown colour.  It will darken during processing.
5. If you prefer a smoother relish, you can use an immersion blender to puree all or part of the relish.
6. Pressure can for 75 minutes in pints, or smaller, at pressure for your elevation, or refrigerate because it won’t last long.
