You can use this same recipe for sliced eggplant and it works well with tilapia fish. Exclude the pounding.
What is a good way to freeze a dish containing pasta that is leftover from supper? Mine seems to get mushy when thawed.

I've never been successful freezing leftover cooked pasta. The only time I've been able to freeze pasta is if it's cooked really al dente.
How to store olive oil and how long is it good to keep?

I'm no expert on that but I will tell you I keep mine in a cool pantry. I do know olive oil doesn't do well in refrigerator. It gets cloudy.
My little grandma, used to have those large gallon tins of olive oil. She kept it a long time and raised 8 kids with it. They all lived exceptionally long lives. So I use that kind of experience for keeping oil. She also kept it in a cool pantry, out of the sun.
I've always kept olive oil in the refrigerator so that it would keep longer. I found this article from Michigan State University about storing it.
