CattailOne of my favorites while I'm out in thebwoods or on or in the water. Many people that harvest these don't know you can peel them like an onion to reveal the inner most layers of white on the base and eat them right away or harvest them. Having to watch sugar levels as many of us age and yes get bigger, these starchy bases can be life savers. Don't forget to harvest the heads for tinder, bedding or pillow stuffing, or even insulation.
