This is one of the reasons why I grow a lot of garlic each year.
I thought that I would try something different. Fermenting garlic and ginger root mix in organic honey. I'm starting with about 75% peeled garlic and 25% ginger root- Slice the ginger cross-grain and thin. The two-quart jars in the rh photo are garlic honey that I put up and the pint jar contains the garlic ginger mix. I'll let folks know how this turns out when the ferment is finished.
The ginger remains hot and spicy and the garlic makes a great combination. I'll make a larger batch the next time.
