Lunch today is scrumptious!
We dined on Smoked Trout Rillettes, a traditional Scandinavian dish with some sort of French influence made with Smoked Trout, Mascarpone and Neufchâtel Cheeses, Scallions, Lemon Juice, Salt/Pepper and a spice combination known as Piquant Post Nordic Spice Blend.
The recipes I have found call for just the trout meat, no skin, and I'd wager that is the French influence as I highly doubt the Scandinavians remove the skin, ergo I minced the skin along with the meat.
I accompanied the dish with Xochitl Totopos de Mais (very thin and extra crispy corn chips) dusted with Sea Salt.
