Lunch today is scrumptious!We dined on Smoked Trout Rillettes, a traditional Scandinavian dish with some sort of French influence made with Smoked Trout, Mascarpone and Neufchâtel Cheeses, Scallions, Lemon Juice, Salt/Pepper and a spice combination known as Piquant Post Nordic Spice Blend.The recipes I have found call for just the trout meat, no skin, and I'd wager that is the French influence as I highly doubt the Scandinavians remove the skin, ergo I minced the skin along with the meat.I accompanied the dish with Xochitl Totopos de Mais (very thin and extra crispy corn chips) dusted with Sea Salt.If you like smoked trout, this is a MUST try dish!! #trout #smokedtrout #fish #lunch #yummy #Scandinavia #France
