Kolokithokeftedes “Zuchinni Fritters” is the perfect Meze for this time of year. The flavors are inspired by my Yiayia Maria who always makes them for us every summer 🇬🇷 Here is my recipe: Ingredients 3 green zuchinni (grated and strained) 1/4 cup diced red pepper 1/3 cup feta crumbled 1/4 cup Gouda grated cheese 1 tablespoon chopped dill 1 tablespoon chopped mint 1 tablespoon chopped parsley 1 teaspoon dried mint 1/4 teaspoon black pepper 1/2 teaspoon salt 5 tablespoons olive oil 1 cup flour 2 eggs 1 teaspoon baking soda 1 teaspoon baking powder 1 white onion finely chopped Vegetable oil for frying Tzatziki as a dip (recipe to follow) Preparation Grate the zuchinni and strain the liquid with a cheesecloth. Add the grated zucchini in a medium bowl and add in all your ingredients slowly. Mix well and set aside. Add vegetable oil for frying in a pan and once hot, add about 2 tablespoons of mixture for each zuchinni fritter. Once brown, flip over and cook the other side. Place them on paper towel to drain the excess oil. Assemble them on a platter and serve with tzatziki! Enjoy! Pro tip: this same recipe can be used as a zuchinni pie and baked at 350 degrees until golden brown! how easy is that?
