French Onion Skillet LasagnaThis dish takes a while, since caramelizing onions is a production. But the flavor it adds is totally worth it.ONIONS1 onion, sliced into rounds2 cloves garlic, minced1/2 tsp thyme1/8 tsp pepper1 1/2 TBSP balsamic vinegar1 cup mushrooms, slicedSAUCE1/2 cup cashews1 cup broth2 tsp lemon juice2 TBSP nutritional yeast1 tsp italian seasoning1 tsp miso1/8 tsp pepperLASAGNA5 whole grain lasagna noodles, broken into pieces2 cups broth2 cups spinach, firmly packedRed pepper flakes optional for servingSaute onions until translucent, adding water to cover bottom of skillet regularly. Add garlic, thyme, and pepper and cook until onions are golden. Add balsamic vinegar and continue to cook until onions begin to caramelize. Set 1/3 of the onions aside. Add mushrooms and cook several more minutes. Meanwhile, add SAUCE ingredients to a blender and process until smooth. Add to the pan along with lasagna noodles and broth. Make sure the noodles are submerged. Cover and cook 15 minutes, stirring occasionally, until pasta is tender. Stir in spinach and cook until wilted.
