Sweet Potato Wedges
* 2 lbs. sweet potatoes (about 3 sweet potatoes)
* 1/2 tsp. salt
* 1 1/2 Tbsp. olive oil
* 1/2 tsp. dry mustard
* 2 tsp. fresh rosemary, minced
While preheating the oven to 450 degrees, peel and then cut the sweet potatoes into wedges. Put the potatoes in a large bowl. Add the salt, olive oil, mustard and rosemary. Mix well by tossing.
Put the potatoes on a baking sheet. Bake for 30 minutes or until lightly browned. Turn the wedges after 15 minutes.
Serve immediately.
