Ingredients:
Cucumber, Regular tomatoes, Pearl mozzarella balls, chopped onion, fresh garlic. Seasonings: oregano, parsley, pepper, salt, vinegar and oil. I use vegetable oil because I have leftovers to refrigerate and olive oil doesn't do well in refrigerator.
Peel Cucumber, cut in half length wise, then cut the 2 halfs in half again. Then cut 3/4 inch slices across the 4 long slices. Next cut the tomatoes into slices. You should have roughly the same number of Cucumber and tomatoes. Add the pearl mozzarella balls. Chop and add 1/2 of a large onion and 1/2 of a garlic. Add your seasonings, oil and vinegar. Mix well and let it sit in refrigerator, longer is better. You know its there as soon as you open your refrigerator. Enjoy
